Vegan Baked Oatmeal Breakfast Cookie

Chocolate Chip Baked Oatmeal Breakfast Cookie

Who says you can’t have cookies for breakfast? Not me! This delicious healthy no egg, no dairy vegan breakfast cookie is one of my kids favorite breakfasts. Naturally being sweetened by the banana and chocolate chips, this recipe is a nice compromise when the kids ask for cookies for breakfast 😉

This is a great recipe to bake on the weekends when I have a bit more time and can cuddle up with my little ones and enjoy our yummy “treat” *wink wink*. Let’s get baking:

To start we will preheat the oven to 350 degrees Fahrenheit. While the oven is heating up, you are going to want to mix up your egg replacer by mixing the ground flax seed and water in a cup or bowl. This will allow time for the flax egg to thicken, so when you add it to the recipe it will have an egg consistency.

After you mix up the flax egg you are going to place the oats in the blender and blend into a flour like texture. This takes approximately 20 seconds, you might have to stop the blender and mix it up so all oats get blended. This step isn’t super important if you don’t mind the oat texture, but when I make this for my kids I like to get it as close to a cookie texture as possible.

Then you will add the banana, flax egg, salt, baking soda, plant-based milk (oat, soy, and almond are perfect for this recipe), and vanilla extract to blender. Blend this until combined. You might have to stop the blender and push ingredients down to blend properly.

Once the batter is blended well enough grease a 1.5QT oven safe baking dish and pour the batter into it. At this point you will add the chocolate chips to the cookie batter (in my case, your little helpers will add the chocolate chips to it lol).

Place in the preheated oven at 350 degrees Fahrenheit for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cookie loaf sit for 5-10 minutes, then you can cut and serve it!

There is no egg and no dairy in this recipe which is perfect for a vegan breakfast. This is an amazing treat I make almost every weekend for my family. It’s one of my favorite recipes because I know that my kids will eat and enjoy it!

Ingredients

  • 1 Banana
  • 1 Cup Oats
  • 2 Vegan Egg (2 Tablespoons of Flax Seed to 6 Tablespoons Water)
  • 1/8 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 1/2 Cup Milk (Almond, Soy, Oat, etc.)
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Chocolate Chips

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Make egg replacer by mixing the water and ground flax seed in a bowl.
  3. Place oats in blender. Blend into flour, approximately 20 seconds.
  4. Add banana, egg replacer, salt, baking soda, milk, and vanilla extract to blender. Blend until combined.
  5. Grease 1.5QT baking dish and pour batter into oven safe baking dish.
  6. Add chocolate chips to mixture.
  7. Bake for 20-25 minutes.
