Vegan (Can’t Believe it’s Bean) Brownies
These vegan bean brownies are absolutely delicious and soo easy to make. Brownies were one of my favorite baked goods before I went vegan, well to be honest anything with chocolate is my favorite lol. The other day I was craving brownies and we had all of the ingredients so my boys and I got to work. Let’s get baking:

Since this recipe is so quick I started with preheating the oven to 350 degrees Fahrenheit as I am gathering all of the ingredients. I will then spray some cooking oil in an 8×8 baking dish.

Then you add the can of black beans and the rolled oats to the food processor. Process this on high for one to two minutes, pausing to push the sides down if needed. This step helps blend the oats so it is a smooth consistency.

Once the black beans and rolled oats are processed you add the maple syrup, coconut oil, vanilla extract, cacao powder(this is my favorite cacao powder to have on hand), salt and baking powder to the food processor. Process on high for 1-2 minutes, or until it is smooth. Again you may need to pause and use a spatula to push the ingredients down from the sides. Once the batter is smooth you can fold in any additional toppings like chocolate chips or walnuts.

Then you will spread the batter evenly in the greased baking dish and bake for 15-18 minutes. After the brownies have cooked you can add additional topping like chocolate chips, chopped nuts, or sprinkles(adding the toppings is one of my little ones favorite part of baking). Allow brownies to cool completely before cutting and serving.

Ingredients
- 1 Can Black Beans, Drained
- 1/2 Cup Rolled Oats
- 1/3 Cup Maple Syrup
- 1/4 Cup Coconut Oil, Melted
- 2 Teaspoons Vanilla Extract
- 2 Tablespoons Cacao Powder
- 1/4 Teaspoon Salt
- 1/2 Teaspoon Baking Powder
*Optional: Vegan chocolate chips, chopped nuts, seeds, etc.
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8×8 baking dish.
- Place black beans and rolled oats in food processor. Turn on high for 1-2 minutes.
- Add remaining ingredients and process on high for 1-2 minutes, or until thoroughly blended and smooth.
- Fold in any additional toppings of choice to the brownie batter.
- Spread batter evenly in the greased baking dish.
- Bake in oven for 15-18 minutes.
- Allow brownies to completely cool before cutting and serving.
