Easy Cilantro Corn Salsa

Back when I was pregnant with my oldest son in 2017 I constantly ate Chipotle. I really craved the fresh tomato salsa and the roasted chili-corn salsa. This recipe is inspired by Chipotle’s roasted chili-corn salsa. There is just something about that sweet and spicy combo with the fresh cilantro and sour lime kick that I was obsessed with. This recipe isn’t exact but I honestly prefer it, plus I can make and eat it anytime I want!

This recipe is super easy to throw together, and it works well with refried bean burritos or sweet potato black bean tacos. It does have a slight kick to it with the jalapeño, however I am sure you could replace it with a green bell pepper for a more mild version of this salsa. Or if you prefer a more spicy salsa you could take it up a notch by adding the seeds from the jalapeño. Depending on the spiciness of the jalapeño this is typically has a nice medium heat.

The base of this recipe is the corn. I like to use fresh corn and just slice it off the cob and add it to my mixing bowl. In Ohio fresh corn isn’t always in season, so I do use canned corn as an alternative. You start by putting the 2 cups of corn in your mixing bowl, and adding your finely chopped jalapeño.

You are also going to add your finely chopped red onion, cilantro, salt and pepper to your mixing bowl. This recipe is truly an easy recipe, the hardest part is the chopping lol. I do want to make a note here that if you would like a spicier salsa you can add the jalapeño seeds, alternatively if you want a more mild salsa you can substitute 1/4 cup of finely chopped green bell pepper. I like personally like a spicier, however my son will eat a medium spice so I leave the seeds out.

Lastly you will add the juice of two limes and mix well. I recommend prepping this a few hours ahead, or even the night before, and putting it in the refrigerator for the flavors to mix. Serve this with chips as an appetizer or add it to your favorite tacos/burritos.

Ingredients

  • 2 Cups Corn
  • 1 Jalapeño, Finley Chopped
  • 1 Small Red Onion, Finley Chopped
  • 1/4 Cup Chopped Cilantro
  • Juice of 2 Limes
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper

Directions

  1. Prepare corn, add it to mixing bowl.
  2. Finley chop jalapeño, red onion, and cilantro.
  3. Add the rest of the ingredients to mixing bowl. Mix well and serve.
