Easy Vegan Homemade Spaghetti Sauce
I grew up in an Italian family, and pasta is one of my favorite dishes that reminds me of home. Typically traditional sauces/pre-made sauces have added cheese for flavor, so reading through all of the ingredients to make sure there is no dairy in the pre-made sauce is a pain. This recipe is so quick and easy to make and the kids will love it too! Let’s get cooking:

To start put the olive oil in a medium size pot heated to medium. Add the chopped onion and sauté for about 3 minutes or until onion is golden brown. I will use frozen diced onion because it saves on time(and tears lol those darn onions).

After the onion has been cooked add in the fresh minced garlic. You only want to cook this for a minute or so to release the flavor, but make sure it does not burn. A good tip from my Grandmother is that onion sweetens your sauce while garlic gives it a more bitter/savory flavor. Depending on your taste preference you can add more/less of whichever you prefer.

Once the garlic has been cooked you will stir in the tomato paste, can of diced tomatoes, and broth or water if you want a more liquid sauce. You can also use crushed tomatoes or tomato sauce here if you do not want to blend it, however you could have little chunks of onion and garlic. My kids don’t wont eat as much if there are chunks so I end up blending the sauce once it is cooked.

Add the basil, oregano, and salt to the sauce and stir. Reduce the heat to low and put lid on pot to simmer for at least 15 minutes, but if you have time let it simmer for 30-45 minutes just make sure you stir it often. This step lets all the flavors come together so the longer you can simmer it the more tasty and flavorful it becomes. For the spices you can adjust the amount to taste, or you could use fresh herb if desired. I typically use dried because its quick and easy to grab (plus the amount of unused herbs that go bad in my fridge is embarrassing so I tend to use dried).

Once the sauce has simmered you can serve. If you have little ones like me I will take the pot off the burner and allow it to cool enough and then put the sauce into the blender to puree it a bit. My toddlers are at the stage that you never know if they are going to refuse eating if they see a chunk of onion so this kinda avoids that lol. I will blend it to a nice consistency, typically 15-20 seconds will do it. You can pour back into pot to simmer until the noodles and sides/bread are ready. All you have to do is pour it over your favorite noodles and serve!
