Easy Vegan Sushi Recipe for Kids

Quick and Easy Vegan Build Your Own Sushi

Sushi is a favorite in our home… My children ask for sushi basically every night of the week, so naturally I got on amazon and ordered a sushi making kit and watched a several tutorials on how to make sushi rolls. Let me tell you it is challenging! I am amazed at how talented and skilled sushi chefs are for getting their rolls so perfect and uniform. While it is time consuming and requires decent skills to make sushi at home, it is really cheap to make at home. I can typically make vegan sushi and edamame for my family of four for under $15!

One day I was running behind schedule and the kids had asked for sushi for dinner, so I decided to try something new: Build your own sushi! My kids love to make their own creations, it’s inexpensive to make (around $10-12 per meal), and best of all it is ready within 30 minutes 🙂 Let’s get cooking:

The base ingredients that I use are: rice, sesame seeds, English cucumber, avocado, mukimame(or edamame), and seaweed snacks. This makes the equivalent of a cucumber avocado roll with edamame. You can also add other ‘ingredients’ like baked tofu or shredded carrots, or any other sushi ingredients you are craving.

This meal is super easy and simple to get started you want to start your rice on the stove. Prepare rice as directed on the box/bag. I use white rice and it typically takes 25 minutes to cook. If you are making baked tofu I would recommend preheating the oven to 400 degrees Fahrenheit, cutting the tofu into long strips, placing it on a greased baking sheet, and putting it in the oven for 20 minutes. Flipping the tofu halfway through. While the rice and tofu are cooking you will want to peel and julienne cut the cucumber into pieces that are 2-3inches long, like so:

Once the rice is done cooking, remove it from the heat and let it cool. If the rice is hot when you assemble the build your own sushi it may give the seaweed snacks a funky taste. While the rice is cooling you are going to want to cook the mukimame per the instructions. The last step would be to half the avocado, peel it and then thinly slice it like so:

Once everything is cut and prepared add some sesame seeds and give each person a pack of seaweed snacks, these are our favorite!

My kids love making their own creations with their build your own sushi. They feel like little chefs showing me what they make and they tend to eat quite a bit which makes this mama super happy 🙂

Ingredients

  • 2 Cups Cooked Rice (1 Cup Uncooked Rice)
  • 1 English Cucumber, Peeled and Julienne Cut
  • 1 Avocado, Peeled and Sliced
  • 1 16 Ounce Package of Frozen Mukimame, Cooked
  • Seaweed Snacks
  • Sesame Seeds

*Can serve with Baked Tofu, thinly sliced carrots, wasabi, pickled ginger, etc.

Directions

  1. Start by cooking 1 cup of rice per instructions.
  2. While rice is cooking, peel and julienne slice the English cucumber.
  3. Start cooking the frozen mukimame per instructions on package.
  4. When rice is done remove from heat and let cool.
  5. Cut up the avocado by cutting it in half, and removing the pit. Peel off the skin of the avocado, place the cut side down, and then thinly slice the avocado.
  6. Once everything is prepared, add sesame seeds and a serving of seaweed snacks for each person.
