Quick and Easy Vegan Refried Beans

Burritos, well taco-burritos if you were to ask our toddlers lol, are an easy weeknight meal for our family, and our kids typically love them. One of our household favorites for taco Tuesday is our quick and easy vegan refried beans.

This vegan refried bean recipe is perfect in burritos or bowl with cilantro lime rice and cilantro corn salsa. I will even add some hot sauce to add a little spice 🙂 Let’s get cooking:

Start by adding the entire contents of one can of pinto beans(this includes the liquid also known as aquafaba) into a 2 QT saucepan. Drain the second can of pinto beans and add just the beans to the saucepan. If you are wanting a lower sodium version you can drain both cans of beans and just add about 1 cup of water to cook the beans.

Add in the vegan butter and bring to a medium high heat. This step will give the beans a nice creamy texture.

Once the liquid has started bubbling/boiling you will reduce the heat to medium low. Add in cumin, dried coriander, cinnamon, onion powder, and garlic powder. Keep the beans at a simmer on medium low heat until the liquid has reduced, it will take approximately 15-20 minutes. Make sure you are stirring often so the mixture does not burn.

Once the liquid has reduce you will use a fork or masher to mash the beans to a creamier consistency. Add salt to taste and serve.

Ingredients

  • 2 Cans (16 ounces) Pinto Beans
  • 1 Tablespoon Vegan Butter
  • 1 Teaspoon Cumin
  • 1/4 Teaspoon Dried Coriander
  • 1/8 Teaspoon Cinnamon
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Garlic Powder
  • Salt to Taste

Directions

  1. Pour Pinto Beans plus aquafaba/ liquid from 1 can of beans into 2 QT Saucepan.
  2. Add vegan butter and turn heat to medium/high.
  3. Once mixture is bubbling reduce temp to medium/low. Add cumin, dried coriander, cinnamon, onion powder, and garlic powder. Simmer on medium/low until liquid has reduced, approximately 15-20 minutes. Stir often.
  4. After liquid has reduced use a fork(or a masher) to slightly mash the beans to desired consistency.
  5. Add salt to taste and serve.
